Hand harvested in late August of 2012, the Pinot Noir for this methode champenoise sparkling wine is the result of a careful cluster selection from Sea Smoke’s estate vineyard. The grapes were gently pressed following an evening in our cold room, then transferred to stainless tanks to begin a long, cool fermentation, which was completed in once-used and neutral French oak barrels. Following nine months of sur lie aging in barrel, the wine was bottle aged an additional 24 months en tirage prior to disgorging. The wine was finished with no dosage, to preserve its finesse.
The nuanced nose expresses lilies, fresh pastries and green fig. The wine enters the palate with energetic freshness with delightful length.

2009 was a temperate year with spells of warmth but free of extremes. This lengthy growing season cooled as harvest approached , embracing morning fog and moderate temperature throughout the picking. The resulting wines have a higher degree of density and flesh than the previous year, with aromatics more in the vein of dark fruit, spice, and earth. With a more masculine tannin structure, the 2009 will age very well over the next twenty to twenty-five years.

Impressive on entry, the wine is brimming with dark fruits— black cherry, savory blueberry, and cola are wrapped in an earthy ribbon of bittersweet cocoa, espresso and hints of vanilla. The palate is gorgeously textured and lively, revealing sweet herbal notes of anise, dried sage and tobacco. Skillful blending of Bordeaux varieties imparts this Cabernet Sauvignon with a measure of restraint, intended to reward long term aging.
