“It was a remarkable vintage for Chardonnay. Moderate weather with no heat spikes—similar growing conditions to the stellar 2013 vintage—led to intense fruit flavors, allowing us to minimize the influence of buttery notes and focus on the lively acidity and apple flavors in our Burgundy-inspired style. A shift to only new oak, combined with the balance of stainless-steel aging, further assured our ability to craft a crisp, delicious wine that is very approachable in its youth.”

Turkey or pheasant would be nice options. And for vegetarians, pair this wine with a vegetable lasagna or a veggie stir-fry.

Winemaking - “Gone Wild” refers to the risky, but rewarding, approach of allowing nature to take its course starting the fermentation, rather than intervening by adding cultured wine yeast. Numerous strains of wild yeast are present in the winery and ride in from the vineyard on the freshly-picked grapes. Relying on them to convert the juice to wine means a slow, somewhat unpredictable fermentation, but each strain contributes its own unique, subtle nuances and, collectively, the various species lend the wine added layers of flavor, dimension and complexity.
